    Ingredients

    • 1 scrambled egg

    • ½ cup chopped melon

    • Salt

    • Black pepper

    • 1 slice uncured ham

    • 1 whole-wheat muffin

    • 1 tablespoon shredded cheese

    Direction

    Toast your muffin and lay the sliced uncured ham, scrambled egg, cheese spiced with salt and black pepper.  Cover this half with the toasted half and enjoy with melon.

    Apple-Cinnamon Oatmeal Pancakes

    Ingredients

    • 1 teaspoon brown sugar

    • 1 egg

    • 2 teaspoons wheat germ

    • ⅓ cup Greek yogurt

    • ⅓ skim milk

    • ¼ steel-cut oats

    • ¼ grated apple

    • ¼ teaspoon whole-grain pancake

    • ⅛ teaspoon cinnamon

    Directions

    Whisk skim milk, and oats and leave to stand 5 minutes before adding the egg and apple, then add dry ingredients. Mix together cinnamon, wheat germ, and pancake separately. Add the remaining ingredients and cook till slightly brown. Serve with brown sugar and yogurt.
